**Gajar Halwa (Carrot Halwa) Recipe**


**Ingredients:**


- 1 kg carrots (grated)

- 1 liter full-fat milk

- 250 grams sugar (adjust to taste)

- 4 tablespoons ghee (clarified butter)

- 10-12 cashews

- 10-12 almonds (chopped)

- 10-12 raisins

- 4-5 green cardamom pods (crushed)

- 1/4 teaspoon saffron strands (optional)


**Instructions:**


1. **Preparation:**

   - Wash, peel, and grate the carrots.


2. **Cook the Carrots:**

   - Heat ghee in a heavy-bottomed pan or kadhai.

   - Add the grated carrots and sauté on medium heat for about 5-7 minutes until they become slightly soft.


3. **Add Milk:**

   - Pour in the milk and mix well. Bring it to a boil.

   - Reduce the heat to low and let the mixture simmer. Stir occasionally to prevent the milk from sticking to the bottom of the pan.

   - Cook until the milk has completely evaporated and the carrots are well-cooked. This process might take around 45 minutes to 1 hour.


4. **Add Sugar and Cardamom:**

   - Once the milk has evaporated, add sugar and cardamom powder. Mix well.

   - Cook for another 10-15 minutes until the sugar dissolves and the halwa thickens.


5. **Add Nuts and Dry Fruits:**

   - In a small pan, heat a little ghee and fry the cashews, almonds, and raisins until they turn golden brown.

   - Add the fried nuts and raisins to the halwa. Mix well.


6. **Optional:**

   - If using saffron, soak the strands in a tablespoon of warm milk for a few minutes and then add to the halwa.

   - Cook for an additional 2-3 minutes.


7. **Serve:**

   - Gajar Halwa can be served warm or at room temperature. Enjoy it on its own or with a scoop of vanilla ice cream!


**Tips:**

- Use fresh, tender carrots for the best taste.

- Full-fat milk gives the halwa a rich and creamy texture.

- Adjust the amount of sugar according to your taste.
