How make  Beef Stew with carrot and baby potato 

### Ingredients:


- 2 lbs beef chuck, cut into 1-inch cubes

- Salt and pepper, to taste

- 3 tablespoons olive oil

- 1 large onion, chopped

- 2 cloves garlic, minced

- 3 tablespoons all-purpose flour

- 4 cups beef broth

- 1 cup red wine (optional, can substitute with more beef broth)

- 2 tablespoons tomato paste

- 1 teaspoon dried thyme

- 2 bay leaves

- 4 large carrots, peeled and cut into chunks

- 1 lb baby potatoes, halved if large

- 1 cup peas (optional)

- Fresh parsley, chopped (for garnish)


### Instructions:


1. **Season and Brown the Beef:**

   - Season the beef cubes with salt and pepper.

   - Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium-high heat.

   - Add the beef in batches, making sure not to overcrowd the pot. Brown the beef on all sides, about 5 minutes per batch. Remove the beef and set aside.


2. **Sauté the Aromatics:**

   - In the same pot, add the remaining tablespoon of olive oil.

   - Add the chopped onion and cook until softened, about 5 minutes.

   - Add the minced garlic and cook for an additional minute.


3. **Thicken the Base:**

   - Sprinkle the flour over the onions and garlic, stirring well to coat and cook for about 2 minutes to get rid of the raw flour taste.


4. **Deglaze and Build the Stew:**

   - Gradually add the beef broth, stirring constantly to avoid lumps.

   - Add the red wine (if using), tomato paste, dried thyme, and bay leaves.

   - Return the browned beef to the pot and bring the mixture to a boil.


5. **Simmer the Stew:**

   - Reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the beef is tender.


6. **Add the Vegetables:**

   - Add the carrots and baby potatoes to the pot.

   - Continue to simmer for another 30 minutes, or until the vegetables are tender.


7. **Finish the Stew:**

   - If using, add the peas and cook for an additional 5 minutes until heated through.

   - Taste and adjust seasoning with salt and pepper as needed.


8. **Serve:**

   - Remove the bay leaves.

   - Ladle the stew into bowls, garnish with fresh parsley, and serve hot.
