Spicy Chicken Curry
Here's a recipe for making a delicious spicy chicken curry:

### Ingredients:

#### For the Marinade:
- 1 kg chicken, cut into pieces
- 1 cup yogurt
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- Salt to taste

#### For the Curry:
- 3 tablespoons oil (vegetable or mustard oil)
- 2 large onions, finely chopped
- 2 tomatoes, finely chopped
- 1 tablespoon ginger-garlic paste
- 2-3 green chilies, slit
- 1 tablespoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- 1 teaspoon fennel seeds
- 1 teaspoon mustard seeds
- 1 bay leaf
- 1 cinnamon stick
- 3-4 cloves
- 2-3 cardamom pods
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
- 1 cup water or as needed

### Instructions:

#### Step 1: Marinate the Chicken
1. In a large bowl, mix the yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt.
2. Add the chicken pieces to the marinade and coat them well.
3. Cover the bowl and let it marinate for at least 30 minutes to 2 hours in the refrigerator.

#### Step 2: Prepare the Curry
1. Heat the oil in a large pan over medium heat.
2. Add the fennel seeds, mustard seeds, bay leaf, cinnamon stick, cloves, and cardamom pods. Sauté until they start to crackle and become fragrant.
3. Add the chopped onions and cook until they turn golden brown.
4. Add the ginger-garlic paste and green chilies. Sauté for a couple of minutes until the raw smell disappears.
5. Add the chopped tomatoes and cook until they become soft and oil starts to separate from the masala.
6. Add the coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Mix well and cook for a few minutes until the spices are well combined.

#### Step 3: Cook the Chicken
1. Add the marinated chicken pieces to the pan and mix well with the masala.
2. Cook the chicken on medium heat until it changes color and is no longer pink.
3. Add water as needed to achieve the desired consistency of the curry. Bring it to a boil.
4. Reduce the heat to low, cover the pan, and let it simmer for about 20-25 minutes or until the chicken is cooked through and tender. Stir occasionally.

#### Step 4: Finish and Garnish
1. Once the chicken is cooked, sprinkle garam masala over the curry and mix well.
2. Cook for an additional 5 minutes to let the flavors meld together.
3. Garnish with fresh coriander leaves.

#### Step 5: Serve
1. Serve the spicy chicken curry hot with steamed rice, naan, or any bread of your choice.
