MOUNTAIN SALAD




 

Mountain salad, also known as a "salade de montagne" in French cuisine, typically features hearty ingredients that would sustain mountain dwellers. Here's a basic recipe:


Ingredients:

- Mixed greens (such as spinach, arugula, and kale)

- Cherry tomatoes, halved

- Cucumber, sliced

- Red onion, thinly sliced

- Bell peppers, thinly sliced

- Radishes, thinly sliced

- Goat cheese or feta cheese, crumbled

- Walnuts or almonds, chopped

- Dried cranberries or raisins

- Olive oil

- Balsamic vinegar

- Salt and pepper to taste


Instructions:

1. Wash and prepare all the vegetables. Tear the mixed greens into bite-sized pieces.

2. In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, bell peppers, radishes, crumbled cheese, chopped nuts, and dried cranberries or raisins.

3. Drizzle olive oil and balsamic vinegar over the salad, using more or less according to your preference.

4. Season with salt and pepper to taste.
